Gluten Free Almond Flour Cheesy Biscuit Recipe

3 people moved at the speed of light!

On March 9, 2011 I sent out an email to my V.I.P. list requesting gluten free recipes. The first 3 people to respond got a copy of my Program for free. (If you’re not on the V.I.P. list just go to the right of this page and get the 5 Things, then you’re part of the “in crowd”.)

It was so much fun to receive these recipes and to give away almost $150 in Programs to three eager ladies who are ready to feel better. They definitely deserved it because the recipes are super fantastic and easy to make.

The recipe below was the first one to come in is from hobbiest chef Teri Kirkner.  Terri loves to cook and create healthy, yet delicious recipes.

Teri’s recipe is gluten free and it is with one of my favorite flours: ALMOND.

Plus it has cheese, garlic, and chili powder … super yum.

Tried and true gluten free recipes are hard to come by, thanks a million for this yummy recipe Teri!

 

The Recipe:

1/2 c. blanched almond flour

2 eggs

1 3/4 c. shredded cheese, use hard or Parmesan

6 oz. cream cheese

1 tsp salt

1/2 tsp. chili powder

1/2 tsp. garlic powder

1 tblsp. of ground flax (optional)

 

Directions:

Allow cream cheese to soften. Beat eggs and add remaining ingredients. Mix well, they should look like lumpy oatmeal after combined.

Use parchment paper on baking sheet.  Use about 1 1/2 tablespoons of batter and shape oblong pieces by 4″ by 2″.

Bake at 375 for 10 to 12 minutes until brown and easy to flip. Flip and bake an additional 10 to 12 minutes.

Cool on a wire rack. These freeze well, I make about 24 at a time and freeze in zipper bags.

Makes about 6 biscuits.

 

These are awesome. I make them for my husband’s friends and clients and they all ask for the recipe.

These are great for sandwiches, tuna melts, hummus, egg sandwiches, etc.  If you can’t have regular cheese, I use a log of Trader Joe’s chevre in place of the cream cheese and Trader Joe’s goat cheddar instead of regular cheddar or Parmesan.  I only use hard cheeses that I can shred myself. They don’t turn out well with the prepackaged stuff because of the other junk in it. – Teri Kirkner

As I read the March issue of Self magazine, I ran across this sweet little excerpt that I know you’ll love.

 

Part of achieving vibrant health is re-defining our own boundaries and prioritizing self care.

 

The reason we spiral down into a depleted state is because we put EVERYTHING else before us. Soccer practice, doing laundry, the project at work, dinner with the in-laws, and cleaning the house became more important than our own health.

 

Right now you’re  thinking, “But Jen, I don’t have time for myself. Between my family and work, I’m lucky if I get 4 hours of sleep at night”.

 

When feel our lives are out of control we become frustrated and forceful in our actions. Guess what creeps in? Anxiety and depression, they are a smack on the head your life is going the wrong direction!

 

Nourishing your health is not an option, it is a requirement to feel alive and happy.

 

Imagine your physical, mental, and spiritual health is like a garden.

 

If you plant crops season after season without composting, weeding, and aerating, what happens? The fruits and veggies start to rot, get disease, and won’t grow.

 

Have you ever seen one of those gardens that is so bountiful that its energy  jumps out at you?  Those types of gardens you want to sit in all afternoon and absorb the vibe.  Caretakers of those gardens prune the plants, rotate crops, and amend the soil.  Conscious gardeners even talk to the plants or play music for them!

 

Our health and happiness is just like a garden, we must nurture it every day. Even if it’s just a little bit, over time the results are profound.  Depression lifts, patience come back, that heavy feeling in your chest melts away, and then you remember … “I haven’t had a panic attack since … I can’t remember!”

Think about what makes you happiest – the one thing guaranteed to get your heart racing and a big grin spreading across your face.  Got it? Good.  Not do that thing.  Yes, today.  Taking control of your life is about knowing what you want and are going after it without hesitation.  You don’t need permission. You just need to know you deserve to be happy.

Gluten Free Lucky Black Eyed Pea Soup Recipe

Feeling down on your luck baby?

You won’t for long if you whip this hummer together!

This isn’t the ‘ol bland black eyed pea recipe that you might be used to. I’ve had bad black eyed pea soup and I wouldn’t dare do that to you.  Blech!

Black eyed peas are notorious for their good luck lore. They are also known as “cow peas”.

My grandma introduced me to black eyed pea soup for New Year’s when I was a kid and I’ve made it a tradition of my own to embrace this precious legume.

That is why I make this recipe on New Year’s Eve or whenever I feel I need a juicy inoculation of luck. Sure, you can mindlessly whip together all the ingredients below; however …

I am going to give you the REAL secret that puts the good ju-ju in it.

When you make this gem, think about what you’d like to create in your life. If it’s New Year’s, an anniversary, or even a birthday – think about what you’d like the coming hear to be like. Put those intentions along with good vibes in the pot as you add the ingredients.

Only put in what you want, none of this “I don’t want XYZ anymore.” Trust me, only look optimistically forward in your life and not back at bad times.

As the pot cooks, your dreams are cooking inside it. Then when it’s time to eat, I imagine I’m literally taking in all the ingredients I need so my year is a radical success and my dreams manifest.

I always feel inspired and as if I’m creating a new beginning in my life when I make this.  Plus, it’s so much fun to make!

The Recipe

Ingredients:

8 oz dried black eyed peas

2 organic vegetable bullion cubes

1 large leek, coarsely chopped

6 ounces of portobello mushroom, coarsely chopped

½ fennel bulb, finely chopped

4 tblsp butter

5 cloves garlic, minced

½ tblsp dried basil

1 tsp dried thyme

2 bay leaves

1 tsp orange rind

1 tsp salt – Redmond Real Salt

4 grains of Szechuan Peppercorn

 

Directions:

Cover black eyed peas and cook for one hour or until soft and tender. Drain and rinse, place in 4 quart pot. Add bullion, garlic, basil, thyme, bay leaves, orange rind, salt and peppercorns.

Saute in 4 tblsp of butter the leek, mushrooms, and fennel until the vegetables are soft. Add to the 4 quart pot. Cover vegetables with filtered water until pot is ¾ full. Bring to boil and reduce to a simmer for about a ½ hour or until all flavors have melded.

I will often let this soup sit on low heat for hours and the flavors mature and get super scrumptious.

Can eating at home really save your life?

Dr. Mark Hyman of the UltraWellness Center boldly states that by not eating home cooked meals we are ruining our families and our health.

He even spouts that the fast food industry has “hijacked” our family dinners through microwave, take out, and fast food options.

Nowadays Americans are eating 50% of their meals out, versus a 100 years ago that number was 2%. With 1 in 5 breakfasts coming from McDonald’s, he takes the position we are in a huge crisis.

His interviewer touts stats from the National Center on Addiction and Substance Abuse at Columbia University:

Kids that ate home cooked meals with their family 5 to 7 times a week were . . .

  • 42% less likely to drink
  • 50% less likely to smoke
  • 66% less likely to smoke marijuana

 

You buying this or think it’s bull honky?

I don’t know about you, but I buy this 1000%. We are in a crisis.  Age, gender, and race isn’t discriminating; people are sick and fat.  They are also suffering and dying. Family’s are falling apart and most kids don’t even know that food comes from vegetables and animals.

If we have sound body we will have sound mind.
 
It is my firm belief that we are what we eat . People often land on my blog and wonder why it’s all about nutrition and food. 

What is going to make you, me, and everyone else sick or healthy directly correlates with what we put in our mouths.

OUCH, some tushies might be hurting a bit!

Are you thinking:“Ok Jen & Dr. Hyman. If you such smarty pants, tell me how I’m going to fit cooking meals in my schedule. I don’t have time to cook.”

Solution? Learning simple ways to cook speedy meals.

The average time it takes to prep my Recipes are less than 15 minutes. Some are slow cookers. I love “throw in the ingredients and do other stuff: meal prepartion.

Trust me – if it’s hard I’m not doing it!  I’m with ya sista’s and brotha’s, I don’t have time either and need to  keep it simple and yummy.

Cooking for ourselves pays off big time. We’ll lose weight, nurture the MOST important relationships, and have drastic improvement in our health.

Besides, cooking is fun!

So, follow the Dr.’s orders: take your meals “in” and save your family and health.
